Scope of Position:

  • The Food & Beverage Manager is responsible for managing all day-to-day operations of the Food and Beverage Department, providing sufficient training and implement adequate procedures to ensure the level of service and operating standards offered are in line with Hoiana Shores Golf Clubs positioning and operating strategy.
  • The Food & Beverage Manager is also responsible for the financial performance of all areas of the Food and Beverage Department, compiling accurate financial and operating reports to monitor the department performance.
  • The goal of the role is to maximize sales and revenue through customer satisfaction and employee engagement.

Responsibilities and Accountabilities:

  • Manage the day-to-day operations of the Food and Beverage Department to stay within the budgeted guidelines and to the highest standards.
  • Manage guest queries and complaints in a timely and efficient manner.
  • Develop, implement and monitor operating policies and procedures for all areas of the food and beverage department aimed at delivering the standard of service and operations expected.
  • Effectively manage the department ensuring the revenue and expenditure targets set in the operating budget are achieved. 
  • Plan the work roster to ensure sufficient numbers of staff are available to properly service the expected number of guests.
  • Assist the Director of Clubhouse Operations in the development of the annual business plan, operating budget and sales and marketing plan for the Food and Beverage Department.
  • Set up outlet, develop menu concepts, banquet, package and promotion concepts in liaison with the Head Chef, ensuring the menu is regularly updated.
  • Support the sales team in promoting and selling banquets and available banquet space.
  • Recruit, train and develop food and beverage personnel with effective training strategies.
  • Ensure all financial and human resources policies and procedures are implemented and followed by food and beverage personnel.
  • Monitor and maintain the food safety standards to be complied at all times by all food & beverage staff.
  • Monitor inventory levels reordering as appropriate to ensure sufficient stock is available at all times.
  • Consolidate detailed food & beverage sales reports in a monthly and annual basis to the Director of Clubhouse Operations as required.
  • Continually create and present innovative promotions to the Director of Clubhouse Operations aimed at increasing patronage and revenue. All promotions must be properly costed.  
  • Develop the annual calendar of events for the food and beverage outlets.
  • Implement effective table booking management procedures to ensure the availability is optimised.
  • Represent Hoiana Shores Golf Club at food and beverage events, exhibitions and meetings as required.

Other Duties:

  • Comply with all standards of performance, behaviour and operational policies and procedures in place at Hoiana Shores Golf Club at all times.
  • Participate in appropriated internal and external activities to enhance prestige of the Company.
  • Perform other relevant duties as directed by the Director of Clubhouse Operations.
